Our Chocolatiers follow the International standards of making our Bean to Bar couvertures. The beans are sorted by hand and roasted. It is further winnowed to obtain cacao nibs. The nibs are then ground to get the apt texture. 


Small Batch Processing

The beans of mass-market chocolate are alkalised by washing them in a harsh chemical solution. By alkalising cacao beans, chocolate manufacturers can manipulate the flavour and colour by reducing the acidity of their chocolate. This is why mass-market dark chocolate is usually intensely bitter with little flavour and an overly dark colour. Unfortunately, alkalising beans can strip the beans of their vital antioxidants and flavanols by up to 80%

Being an ardent chocolate lover, I always knew my vocation was that of creating the finest chocolates. D’abel is a brand that occurred to me while I was pursuing a diploma in chocolate. As I trained in the making of chocolate, I realised cacao is a super-food.
